    This exceptional culinary theater is directed and curated by a legendary duo: Chef Emmanuel Stroobant, of the two-Michelin-starred contemporary French restaurant, Saint Pierre, and Chef Kazumine Nishida, of the two-Michelin-starred sushi institution Shoukouwa, both based in Singapore.

    Born in Belgium, Chef Stroobant spent over 30 years immersed in the culinary cultures of Southeast Asia and has long been captivated by the exceptional ingredients of Japan. He has earned global acclaim for seamlessly infusing classical French techniques with vibrant Asian nuances.

    Chef Stroobant’s visionary global perspective and Chef Nishida’s profound mastery of traditional sushi come together in a concept years in the making which was finally brought to life through an exceptional collaboration that has blossomed into Kappo Dining Saki.

    Every ingredient at Saki is hand-selected through the rigorous, uncompromising eyes of true mastery. While basing itself on traditional techniques such as dashi (broth) and hiire (heatcraft), onto sashimi, sushi, and owan (clear soups), it subtly accompanies not only traditional yakumi (Japanese seasonings) but also rich Asian flavors and aromas such as lemongrass and Sichuan peppercorn, incorporates French techniques and presentation, casting a brilliant brand-new light onto the world of Japanese gastronomy.
